I've never seen white & black sauces at hibachi.
The typical duo of sauces is a Mustard Sauce (light brown) and a Ginger Sauce (dark brown).
Mustard Sauce
3 tablespoon Dry mustard
2 tablespoon Hot water
1 tablespoon Sesame seeds; toasted
? cup Soy sauce
? Garlic clove; crushed
3 tablespoon Whipping cream; whipped
In small mixing bowl, combine mustard and water to form paste. Place in blender with remaining ingredients except cream and blend at high speed about 1 minute. Remove and stir in whipped cream.
Ginger Sauce
1 Onion; small; sliced
? cup Soy sauce
? cup Rice wine vinegar
1 1-inch piece gingerroot
Place all ingredients in blender and mix at high speed until ginger root and onion are finely chopped, about 2 minutes.
I know it takes a lot of Dark RUM and salsa
Benihana Magic Mustard Sauce
3 tb Powdered mustard
2 tb Hot water
1/2 c Soy sauce or tamari sauce
2 tb Sesame seeds, toasted
1 Garlic clove
In a small bowl, blend mustard and water into a paste.
Pour paste into blender container; add remaining ingredients and process about 1 minute or until smooth.
Makes 6 servings, about 2 Tb. each. 56 calories per serving.
Serving suggestion for Sauces: Use as a dipping sauce for chicken or
steak, or as a dressing for bean or alfalfa sprout salad.
White: maybe is miso mayonese
2 tsp rice wine vinegar
2 T red miso paste
2 tsp sesame oil
1/2 tsp chili flakes
1/2 lemon, juiced
1/2 c mayonnaise
Whisk in a bowl until all ingredients are blended. Taste and adjust seasoning. Chill and serve with spring rolls.
