honestly, your list sounds about right. most restaurant like to keep it simple when it comes to feeding a lot of people. they would just mix hoisin sauce with the chili sauce. then they would add peanuts on top and sometimes shredded carrots.
haha. and asian people really don't measure with measuring spoons or cup. they usally eye it. =p
This may not help much, but... teyraki, green onion,and ground ginger
VIETNAMESE DIPPING SAUCE
Yield: 1 servings
1 c Minced fresh pineapple
3 tb Mam nem (anchovy sauce)
2 Garlic cloves, crushed
1 Fresh red chili pepper,
-seeded
1 tb Sugar
3 tb Fresh lemon juice
1 1/2 ts Rice vinegar or distilled
-white vinegar
3 tb Nuoc mam (Vietnamese fish
-sauce)
Over a bowl, squeeze the pineapple between your hands
to extract as much juice as possible. Combine the
pulp and juice and set aside. Into a bowl, strain the
anchovy sauce through a very fine sieve, pressing on
th solids with a spoon to extract all of the liquid.
Discard the solids.
Pound or crush the garlic, chile and sugar to a fine
paste in a bowl. Stir in the pineapple mixture,
strained anchovy sauce, lemon juice, vinegar an fish
sauce. Stir to blend.
Yield: 1 1/3 cups
if da 1 you mean is da 1 with garlic den i no how to make it. juz put half a bowl of water then a spoon of vinegar, 2 tbls or 3 of sugar, few spoons of fish sauce. mix them all together then put sliced chilli < if u want chilli> and da most important one is garlic. The more the betta. If no garlic ---> no taste !!!
Here's a simple recipe, but basically, you already figured out the ingredients. I even cheat more by using crunchy peanut butter instead of chopping the peanuts

haha. I have to make this sauce all of th e time at home! It's basically what you said. There's no exact amount of ingredients you put in the sauce, but this is what I do.
Take a huge tablespoon of creamy peanut butter and put it in a bowl. Take a much smaller tablespoon of hoison sauce, and put it in. Then use a small teaspoon, and put in around two to four spoonfuls of sugar. You can always taste it later to see if you need to add more. Last of all, add water! Put in a little at a time, so that it won't get watery. It might take awhile to get it the right texture, but be patient! If you put in too much sugar or too much of anything, just add more of the other things to balance it out.
I've never heard of the red chili sauce thing, but you could always try.
