Yikes, sorry. I LOVE to eat japanese ramen too! BUT I always just buy my favorite instant brand: yamachan-a red colored pkg at a local asian grocery market.
I know how to make chinese chicken salad tho...
I searched under "Japanese traditional ramen, Japanese traditional ramen recipe, How to make traditional ramen recipe, and How to make traditional ramen" and nothing good I could find. Next in Japanese, so I have one URL that's Japanese. But it has pictures. I don't know how much would that site help but it look good so I put on here. I finally found a good site by searching under "How to make ramen noodles from scratch." It's the second URL and it's right under Thai Chicken Peanut Ramen Salad. The last one is also a recipe.
I couldn't find anything on the soup. If you want me to translate the Japanese site then go a head and ask.
