Chinese Black Rice (also known as purple rice, or black glutinious rice)
According to the book I have, it should be rinsed well (3 times) and then soaked for 3 hours prior to cooking. After rinsing and soaking, I would drain and cook on a stovetop like regiular rice.
After rice is tender, drain and add sugar, while rice is still hot. The Chinese also add dried Jujubes (a type of plum) and a little grated orange zest.
But, the book that I have says the purple rice is healthy and full of fiber, but not good for digestion.
You would need to rinse it like any other kind of rice. But the black/purple rice needs to be soak for hours. Usually I recommend doing it overnight so that you can get to it the next morning or whenever you can. It doesn't really matter how long you soak them for as long as it doesn't soak for more than a day. These kind of rice are a little harder than regular rice, so you would need to cook them a little longer and a little more water. BUT it all depends on on soft you want your rice to be. I usually use this rice with a mixture of sweet sticky to make purple sticky rice. And it's not cooked on one of those rice cooker.
