    How does one cooked chicken fried rice (like in the restaurants)?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Answer:
Ingredients:
1) Rice (new or leftover).
2) Small veggies (carrots/peas/etc).
3) Egg (beaten)
4) Soy sauce.
5) Lots of butter!

...oh yeah, and chicken.

Directions: Saute.
2 cups day-old cooked rice
1/2 to 1 cup cooked chicken or pork, cooked and chopped
1 scallion, chopped
1 cup frozen mixed vegetables
1 egg
soy sauce
2 T canola oil

Beat egg in small bowl. Heat 1 T oil in frying pan. Pour beaten egg, stir till cooked and remove from pan - should look like a greasy scrambled egg. Break egg into small pieces with fork.

Microwave vegetables till thawed, according to package directions.

Place the other 1 T oil in frying pan and heat over medium-high.
Add chicken (or equal amount of pork) and scallion. Stir-fry until meat is heated and white part of scallion is transluscent. Add mixed vegetables and stir-fry until heated. Add cooked egg bank into the pan.

Add rice and thoroughly mix with meat and vegetables. Drizzle in more oil if rice starts to stick. Add soy sauce as desired.

Chinese Chicken Fried Rice I

INGREDIENTS
1/2 tablespoon sesame oil
1 onion
1 1/2 pounds cooked, cubed chicken meat
2 tablespoons soy sauce
2 large carrots, diced
2 stalks celery, chopped
1 large red bell pepper, diced
3/4 cup fresh pea pods, halved
1/2 large green bell pepper, diced
6 cups cooked white rice
2 eggs
1/3 cup soy sauce
DIRECTIONS
Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.
Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.
Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.
CHINESE CHICKEN FRIED RICE

1/2 c. butter
4-6 eggs, slightly beaten
1 to 1 1/2 c. leftover chicken, diced ham or shrimp
2 tsp. soy sauce
3 c. cooked rice
1/2 c. finely chopped green onions with tops
1/2 tsp. black pepper
16 oz. can bean sprouts, drained
4 oz. can mushrooms

In large skillet, melt butter. Add eggs and fry for a few minutes on both sides. Break up with fork while cooking. Add meat, rice, onion, sauce, pepper, bean sprouts and mushrooms. Heat until hot, stirring often. If it appears too dry, add more butter. Can also add can of sliced water chestnuts.
Please whatever you do, DO NOT USE BUTTER! Yech! That's not how it's done in Chinese restaurants, use vegetable oil. Crazy American cooking habits ruin too much great food.
