90 days if it's from the grocery but if you made it hummus lasts up to 2 weeks in the fridge
If you make it fresh, it's best to eat it all as soon as possible...After 24 hours, it starts to really dry up!
2-3 days the most
You should try to consume it within a couple of days. Even in the fridge it will not keep longer. A day after it is made the surface will dry up and crack.
Have you ever tried hummus soup with the left over? Save the water in which you had boiled the chickpeas. Heat it up. Make some toast bread and cut it into small pieces. Place them in a soup bowl. Add a couple of tablespoons of hummus on top of the bread. Pour the hot water, stir it gently so the hummus disolves evenly. Add crushed red peppers to taste.
Additional note: you can heat either olive oil or melt butter/margarine and pour it on top of your soup sizzling. We love this soup on winter evenings here in Cyprus. It is very popular. A glass of fullbodied red wine goes well with this soup (cabernet sauvignon, merlot, shiraz etc.)
Keep it in the refrigerator for a couple of days, after this it dries up and cracks.
I keep mine for about a week (maybe 1 1/2 weeks).
I don't have a problem with drying and cracking.
