honestly, I think you pretty much have to eat it right away.
sushi does not last very long i would say 2-3 days
Try to eat fresh and if you can't finish it, you can eat later.
Don't put it in fridge/overnight because the rice will be tough, it doesn't good anymore.
I tried it many times and it turn out nasty!
