hello....i ordered 3 party platters of sushi at noon yesterday (Saturday). only two were eaten at the party last night. i have one whole platter left and it's been refrigerated since i got it home. about 28 hours. is it still safe to eat? or due to fact that it's raw fish, do i need to discard it? Thanks!

Answer:
For sushi, main factor is temperature. If your sushi is standing more than 4 hours between 41-75 degree F, you must throw away all of them, don't eat it. If your sushi is kept under 40 degree F, you can keep as long as you want. The thing is, if you keep it under 40 more than 24 hours, it will change color, taste becomes bad, but it will not harm you at all. Seriously, I used to be a sushi chef at well-known supermarket store chain in New York State for more than a decade.

My answer is: if you kept your platter out of the fridge more than 4 hours, discard them all.
If you got it from a sushi place that knows what it's doing it should be fine. I would eat it if it was good the day before. I am kinda of afraid of sushi places now. It's all because the last time I went, I ordered some assorted tempura. The tempura vegetables were delicious but whoever was handling the prawns...they didn't rinse their cutting board properly and my prawn tasted as if it was doused in bleach. I felt so sick too, I almost puked. I used to work at a fish market and we had to constantly bleach the cutting boards to prevent bacterium growth(inspectors come in all the time to make sure you have bleach present). I would always rinse my boards really well. It looks as though one individual didn't do so. So... as long as it doesn't smell like bleach it should be fine. You would know if it's no longer good. Fish deteriorates more and more each day. The mushier the fish, the older it is. If it's mush, don't eat it.
One day. I have been in food service for a long time so believe me. There is a lot of bacteria in raw fish as it is we don't need it to multiply. I do love Sushi!
