I think you'll find that the REAL salt fish is supposed to be soaked for 24 hours - AND have the water changed several times - I'm talking about the stuff you could almost build houses out of in its dry state (cod) - the way Eskimos preserve it I think.

change the water often, like every 60 minutes. it should be OK

If you wash the salt off and then soak it for the rest of the day, changing the water from time to time, it should be OK.

When I worked in Jamaica, we served it everyday on the breakfast buffet, the fish can be de salted by Yes soaking it during the day. And then poaching it in plain water when you make your fritters, but remember when making your fritter to not add any salt to your batter.
We used to make the traditional breakfast dish Ackee and Saltfish, with lots of onions, scotch bonnet peppers and tomatos. We used tinned ackees, the best way to cook the fish is in lots of water.
