fyi - the crab in sushi is always cooked.
I don't know why you think sushi is a cooked product, but every Japanese restaurant that I have been to has had nothing but the freshest raw fish available. And made right in front of you, not from a store where it sits for god knows how long.
Sushi is not something to mess around with I give you that. That is why when you want sushi your best bet is to go to the sushi bar and have it made right then and there. The rule for buying it though, if you must, is get it just as its done being made, DO NOT REFRIGERATE IT and eat it within 30 minutes.
