I plan on having shrimp, stuffed flounder, king crab legs and maybe fresh tuna steaks

Answer:
because you will be serving several entrees, you can buy the following:
shrimp - 26-30 size- 1/3 lb per person
flounder - 4 oz per person
crab legs - 1/3 lb per person
tuna - 4 oz per person
Each person will eat about 6-8 ounces of sea food if you have other food to eat with it. So a total of about 5 lbs -10 lbs..depending on how much you really want to have. You must also consider waste, king crab legs have a lot of waste so you may want to get more to compensate for that loss, stuffed flounder is rather expensive depending on the purveyor so you might not want to get as much and fresh tuna steaks have very little waste so you may want to get a lot of that.

Oh and a neat idea with your tuna steaks...seared sesame tuna steaks on wontons! Brings out the great flavor and provides a lil crunch!
Usually an average person would eat about 1 pound of food during a meal. It is best to guess which food you think your guests like best, then figure out how much of each type of seafood you need to purchase. A little extra doesn't hurt rather than running out of food.
