cut off head behind gills, slit bottom from front to tail, use finger or running water to remove guts. TA Da!
with a very sharp knife slit the belly from the anus working up to under the gills , only put it in about a half inch at about a 45 degree angle , cut under the mouth removing the gills and guts
Actually, most sushi is made from thin slices of fish filet, where you cut the meat from the bones. (Which, with mixing with the rice, wasabi and seaweed would make a pretty cool school demo in itself)
To gut a fish, take a knife and slit the belly, then reach in and pull the guts out. Rinse with water and then check to make sure all the innarnds are out
btw - better check with your teacher first - most schools have a no tolerance policy for ANY knives on campus
Gutting a fish for sushi is more like art. its not easy, takes years and years of practice and apprenticeship. Plus it'll hardly gross people out. People (sushi lovers will start drooling, actually.. :0~)
I know another way to freak people out.
Grab a live catfish (medium sized)
To kill it, put in a plastic bag.
Get a stone as big as a snooker ball.
Bash its head.
Dead catfish.
How to clean the scales, scrape the fish with a knife from tail to head. (catfish don't have scales, i think..)
Take a sharp knife. Cut deeply into the bottom of its tummy in a straight line just below the gills and all the way to 3/4 of the length of the fish and pull out all its guts, gills too. The guts might contain fish crap (this'll surely make your crowd sick).

The people who prepare and select fish are highly regarded for their techniques and experience. If you are not on their level yet offering a how to guide, you could end up insulting or looking foolish.
