Nah the mayonnaise one is always sweet. Germans and others have a more vinegar based one.

This coleslaw is made with a tangy vinegar dressing, with sugar, cider vinegar, celery seed, and other seasonings.
INGREDIENTS:

* 1 large head of cabbage, finely shredded
* 1 medium bell pepper, finely chopped
* 1 medium sweet onions, finely chopped
* 2 carrots, grated
* .
* Dressing:
* 1 cup sugar
* 1 teaspoon salt
* 2/3 cup vegetable oil
* 1 teaspoon dry mustard
* 1 teaspoon celery seed
* 1 cup cider vinegar

PREPARATION:
Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl.
In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled.
Enough slaw for 8 to 10 servings. Delicious with pulled pork!
Are you talking about the kind with shredded carrots and green cabbage all mixed up in mayonaisse?
If you mix mayonaise with natural youghurt, it makes the coleslaw less sweet.
i like to make coleslaw by mixing balsamic vinegar, can add alittle oil...optional, w/alittle sugar (can add a pkg of ramen noodle SEASONINGS...not the noodles...yet... to the vinegar & sugar if u like. any flavor). then i pour it into the raw coleslaw and add seseme seeds that i toasted (either in oven for a couple minutes or just heat on stove and they will toast quickly) and toss it all together. you can break up the uncooked ramen noodles and add to it too if u like. isnt a Czech recipe, but the best i have . good luck to u :)
Mix some raw grated carrots, cabbage and onion into a bowl - add some mayonnaise et voila!

believe it or not, mixing Wishbone Italian with some shredded purple and green cabbage and carrot makes an EXCELLENT slaw...make sure to use some fresh ground Tellicherry pepper though, that MAKES it! :)
My grandmother was German, and she made this cole slaw. Not sure if it's what you're looking for though.

Grandma’s Coleslaw


3 ? tbsp vinegar
3 tbsp half & half
? tbsp sugar
1 small cabbage, shredded
1 can crushed pineapple

Blend and serve. (Flavors probably “marry” better by sitting in the refrigerator for a while.)
