I was thinking that it would be better if I travel to Mexico city and try some restaurants there to see if one of this chefs wants to come here as a consultant and is able to trained my kitchen staff or if I should stay there a few months and learn some techniques. So my question is what are the best mexican restaurants in mexico city?

Answer:
I have lived in mexico with mexican inlaws and learned the real mexican cooking from grandma and mother in law. I believe the best way is to go to mexico and learn it..but not in restaurants, try to learn it directly from families. Good Restaurants are already kind of americanized.

I make tamales, enchiladas, all kinds of tacos and much more exactly the way it is done in mexico. Friends are ordering my food for their parties and everyone says it is the best mexican food they ever had.

I have to say that the cuisine changes from state to state. So if you have a chance go to Michoacan, Guadeljara, Hidalgo (I lived there) Oaxaca, just to see how different they cook. I did..


But I like one restaurant in Mexico City, very traditional : Cafe Tacuba, an old restaurant 500 meters from The Zocolo.

And Hosteria Santo Domingo in downtown, Belisario Dominguez 72.

Don't go! Learn more about the business as a whole first! Go to food and beverage underground web site before you lose your shirt. The business is just not as easy as finding a chef and going for it.
