I always put my seafood in the straight citrus juice in the fridge and let it marinate several hours before i make the ceviche for this reason.
probably not enough vniegar in it.
Unless it has been fridged all this time, I'd pitch that raw shrimp!
sounds like you needed a more acidic marinade. sorry - but you should toss it.
I'd toss it and start with some fresh.
what size shrimp are you using?
for cheviche i'd go with smaller sized shrimp, don't use the jumbo ones. if that is all you have i'd reccomend cutting them up into smaller pieces. and add some more acid to your dish, limes tend to have a higher acid content than lemons or oranges. You could also try adding some fresh chopped mango, red onion, fresh cilantro.

did you use enough lemon/lime juice?
You acid wasn't strong enough.
Throw it in the microwave for 45 seconds.
