    I made tamales and they tasted great, but...?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

they were kind of dry..what can i do to make them better. i did that test with the masa, where you drop some in a cup and if it floats its ready, well it didn't float. i was following a recipe...i love the taste and flavor, but the meat was dry and the masa was dry...any tips guys to improve them...maybe i over boiled the pork and didn't use enough lard in the masa..

Sounds like you just needed to add more pork broth or water to the masa. When you're able to easily & smoothly spread the masa on the corn husk is a good sign that the dough is ready. Also remember that when you're steaming them in that big pot...to always have enough water to cover the base of the pot. Hope that helps! Good Luck. Making tamales always takes practice and lots of patience.
you kinda answered your own question with the masa. it didn't float so it wasn't ready. as far as the meat, add a little of the liquid from the boiling to keep it moist.
In other words,, You did not follow the instructions?
Next time stick to the letter of the recipe.
I like echo and Mr Ed and the advice I also recommend a pressure cooker too. My great granny had one and you need to be careful so you dont burn yourself. I am planning on a cooking course this summer while I have time off. Dont use a pressure cooker without expert advice and now that is a question for us all

Sometimes, when you have something like this, adding a sauce helps. It's soaks into the meat and moistens it. As for the floating thing, you might not have had it at the right temperature.
