I was wondering if anyone has some good chinese food recipes? I like general Tsos, Sweet and sour chicken, chicken fried rice and cream cheese and crab wontons.

Answer:
Chicken Fried Rice

4 large egg whites
1/2 cup chopped scallions -- green and
white parts
2 medium garlic cloves -- minced
12 ounces uncooked boneless skinless chicken breasts --
diced
1/2 cup diced carrot
2 cups cooked regular or instant brown rice -- kept
hot
1/2 cup frozen green peas -- thawed
3 tablespoons low-sodium soy sauce

Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes. Remove from pan and set aside.

Offheat, recoat skillet with cooking spray and place back over
medium-high heat. Add scallions and garlic; sauté 2 minutes. Add chicken and carrots; sauté until chicken is golden brown and cooked through, stirring frequently, about 5 minutes.

Stir in reserved egg whites, cooked brown rice, peas and soy sauce; cook until heated through, about 1 minute.

This recipe yields 6 servings; about 1 cup per serving.


Sweet and Sour Chicken

1 pkg Philadelphia Cream Cheese
1 can crab meat, drained
2 T flour or Wondra
3 scallions, minced
1/4 tsp onion powder
1 egg, beaten
oil for deep fryer
Wonton Wrappers

Finely mince the scallions. Combine with cream cheese, crab meat, and flour or Wondra.
Beat the egg in a small bowl - this will be used to brush the edges of the wonton wrappers before folding, and helps to keep them together.
Place large tablespoonfuls of the crab mixture in the center of each wonton skin and brush edges with egg mixture. Fold over to form a triangle, then press edges together to seal.
Bring the two side edge corners of the triangle to the middle and press these together to form a ring.
Heat oil to 350 degrees in a large, heavy bottomed pan, sufficient to cover the wontons.
Fry wontons until golden, turning once, about 2-3 minutes. In order to avoid lowering the temperature of the oil, do not attempt to fry too many at once. Remove with a slotted spoon, drain on paper towels and serve. Variation: You can substitute the cream cheese and crab mixture with pre-packaged crab / seafood spread. Check the ingredients label and use only cream cheese based products. Add finely minced onions or scallions and use as above to fill wonton skins.

1. TOMATO SOUP WITH EGG FLOWER

Ingredients:

4 tomatoes
1 onion
1 tblsp oil
3 cups chicken stock (1 cup = 250 ml)
pinch of MSG (monosodium glutamate)
1 egg, beaten
salt and pepper

Instructions:

Skin and cut the tomatoes and cut the onion into eighths. Heat the oil
in a large saucepan. Add the tomatoes and onion and fry for 5 minutes or
until softened but not browned. Pour off excess oil and add the stock,
salt, pepper and MSG. Bring to the boil and simmer for 30 minutes.

Add the egg slowly, stirring constantly, until it separates into shreds.

Sweet and sour chicken
INGREDIENTS
1 pound skinless, boneless chicken breast meat - cubed
2 tablespoons vegetable oil
1/2 cup sliced green bell pepper
1/2 cup sliced red bell pepper
1 cup carrot strips
1 clove garlic, minced
1 tablespoon cornstarch
1/4 cup soy sauce
1 (8 ounce) can pineapple chunks, juice reserved
1 tablespoon vinegar
1 tablespoon brown sugar
1/2 teaspoon ground ginger
DIRECTIONS
Brown chicken in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.
In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, vinegar, sugar and ginger. Stir together and bring to a full boil.

Crab Rangoon
INGREDIENTS
1 quart oil for frying
1 tablespoon vegetable oil
1 clove garlic, minced
2 tablespoons minced onion
1 medium head bok choy, chopped
2 tablespoons chopped snow peas
1 (6 ounce) can crab meat, drained
1 (8 ounce) package cream cheese, softened
1 tablespoon soy sauce
1 (14 ounce) package small won ton wrappers
DIRECTIONS
Heat oil for frying in deep-fryer or large, heavy saucepan to 375 degrees F (190 degrees C).
Heat 1 tablespoon vegetable oil in a large skillet. Add garlic and onion, and saute for 2 minutes. Add bok choy and pea pods, and stir fry until the bok choy and pea pods are crisp-tender.
In a large mixing bowl, combine crab, cream cheese, soy sauce and sauteed vegetable mixture. Drop mixture by 3/4 teaspoon into the center of a won ton wrapper. Fold the wrapper in half to make a triangle. Seal the wrapper around the mixture by wetting your finger with cold water and pressing the ends together.
In batches, fry the dumplings in the prepared oil until golden brown. Drain on paper towels
General Tso's Chicken
Marinade:
2 pounds boneless, skinless chicken, thinly sliced
1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon peanut oil
2 cloves garlic, smashed
2 slices fresh ginger, smashed
1 handful fresh cilantro leaves
Kosher salt and freshly ground black pepper
Peanut oil, for frying
1 large egg, lightly beaten
1/2 cup cornstarch, plus 2 tablespoons for slurry
1/2 cup water
1 teaspoon toasted sesame oil
4 dried red Thai chilies
4 scallions, thinly sliced, plus more for garnish
2 cloves garlic, finely chopped
1 (1-inch) piece fresh ginger, peeled and finely chopped
3 thick strips orange zest
1/2 cup low-sodium soy sauce
1 1/2 cups chicken stock
2 tablespoons rice vinegar
1 tablespoon honey
Cilantro leaves, for garnish
Steamed white rice, for serving


Put the chicken into a bowl with the remaining marinade ingredients. Stir well to combine all the flavors, cover, and marinate in the refrigerator for 30 minutes.
Heat 2 inches of peanut oil in a wok or deep skillet to 375 degrees F. Mix the egg, cornstarch, water, and sesame oil in a large bowl until smooth and season with salt and pepper. Add the marinated chicken and coat it well with the batter. When the oil is hot, cook the chicken pieces in batches until they are browned and crisp, about 4 to 5 minutes per batch. Drain on paper towels. When you have fried all the chicken, pour off all but 2 tablespoons of oil. Over high heat, add the chilies, scallion, garlic, ginger, and orange zest. Stir-fry for 1 minute then pour in the soy sauce, chicken stock, vinegar, and honey and bring it to a boil. Mix the remaining 2 tablespoons cornstarch with 2 tablespoons cold water until smooth. Pour the slurry into the boiling sauce, in 2 additions, until the sauce thickens. Add the chicken pieces and cook until they are heated through, about 2 more minutes. Garnish with scallions and cilantro leaves. Serve with white rice.

2 teaspoons ground white pepper
1 egg white
1 1/2 pounds boneless skinless chicken breasts, sliced into thin strips
1 tablespoon canola oil
1/4 cup low sodium soy sauce
2 tablespoons tomato paste
2 teaspoons sesame oil
1 tablespoon honey
1 tablespoon crushed garlic
2 tablespoon grated ginger
1/4 cup rice wine vinegar
1 tablespoon orange marmalade
1 (8-ounce) jar baby corn, drained
1 (8-ounce) can sliced bamboo shoots, drained
1 (8-ounce) can crushed pineapple, drained

In a large bowl, mix the cornstarch, white pepper, and egg whites. Add the chicken and toss until well coated.
Heat a large nonstick wok until blazing hot. Coat the bottom of the pan with the canola oil. Add the chicken to the pan and move continuously to prevent chicken from sticking together. Saute for about 1 1/2 minutes. Once the chicken is cooked, remove from the wok and keep warm.

Over high heat, add to the wok the soy sauce, tomato paste, sesame oil, honey, garlic, ginger, vinegar, and marmalade. Lower heat and simmer for approximately 30 seconds to thicken. Add the baby corn and bamboo shoots and warm through.

Once sauce is thick and warm, whisk in the pineapple.

To serve, arrange chicken strips on a platter and pour the sauce over the chicken.

Chicken Fried Rice
2 cups day old steamed rice
1 1/2 cups grilled chicken
1/2 cup green onion
1/2 canned or fresh corn
2 white eggs
1/2 tsp crushed garlic
3 tbs molasses
1 tbs sweet soy sauce
1 tsp kosher salt
1/2 tsp black pepper
1/4 veg oil

heat wok and pour in veg. oil. when oil is heated scramble egg. Add grilled chicken, green onion, garlic, corn. Let heat. Add cold rice. Mix together, then add kosher salt, pepper, molasses and sweet soy sauce. Mix together until rice is well browned.
