I dont know, but my last g/f was south korean and it smells like rotten dung beetles. It could be my grand dad loved it. I have never gone over the house and not seen it in the fridge. I never tried it, it would BLOW me away. He is not Korean tho

All I know is that if there is Kim Chi in the refrigerator I have to eat it. It probably should be a law but it seems like it would be pointless like making a law that you have to breathe.

It depends on the meal. But it's very commonly served as a sort of accompaniment to the meal, like a condiment.
It's really wonderful, very much an acquired taste (because my fiance hates it to bits).
I love eating it with noodle soup (noodles, with soup, with fried soy mushrooms and veggies, Chinese-style), because it brings not only a zing to the taste, it also adds much needed depth of taste to the food.
I love the way the tastes plays with your tastebuds.

When I went to China for 4 days, I was missing it so much, I ordered kimchi noodles at the airport.
However, some of my Korean friends dont like Kimchi, some cant even eat ANY spicy food, and yes they live in Korea.
More common to eat it at lunch and dinner, than breakfast... however there is no rule saying when and where and how to eat kimchi.
Not a must have, just an 'if you want it, eat it'...
