I was at a restaurant in Manhattan last month called Kunjip. The server brought out several dishes as appetizers. One was a bright orange pile of food that looked like grated carrots but was fish. Another was a deep green vegetable that had a stalk and a deep green leaf at the end-both were delicious. I would love to know what these were-they were served before the meal, in small platters along with other items. The server was very busy and didn't speak very much English, so I was unable to find out from them. Can anyone help, please? I'd love to find these foods again.

Ummm...well if its served beforehand with other platters and if they were all cold dishes then its definitly pickled!
They serve them as appetizers and I agree with you on the absolutely delicious part!
Can't help you with the exact vegetable as most resturants pickle their own appetizers and serve different ones according to the season...
I can help you with the fact that its called "kimchi" but you'd have to find out exactly what kind for example mine would be "bosam kimchi" a mix of carrots, spring onion n korean red paste
