(Soft Pretzel)
500 grams bread flour
1 pkg. yeast or 1/2 cake fresh yeast
1/2 teaspoon sugar
300 ml lukewarm water
1 teaspoon salt
30 grams baking soda
Prepare a yeast dough. Knead and divide into 12 equal pieces and shape either into Broetchen (roll) or Brezel (pretzel). Let rest for 15 minutes.
In pot bring 1 liter water and baking soda to boil. Turn over the dough pieces, place on wire spoon (like they use for chinese cooking) and hold into boiling water. Bring back to boiling, remove and let excess water run off. Preheat oven to 450.
With a sharp knife, cut a cross into dough and sprinkle with coarse salt and bake 30 minutes oven until golden brown in color. If you want them a bit softer, bake 20 minutes.
