I'm wanting to make a "Greek" pizza. I know it sounds weid, but I'd like to know what goes into some typical Greek foods. What spices, ingredients, specific flavours do they use? Thanks

Answer:
Garlic is the standard. To use in a pizza I would roast it first, take the bulb, place it in a square of alu foil, drip a teaspoon of olive oil and wrap closed. Roast in a slow oven(300F) for a hour or until soft. Mix in your tomato sauce. Use sundried tomatoes, green/black olives, anchovies, feta, or a softer goats cheese that will melt on your pizza. Red onions, sliced thinly and sauteed to prevent burning in the oven. A little basil, thyme, oregano, mint. You could cheat and mix your cheese with mozzarella to soften the flavour if it is too strong for you. Peppers are good, but I prefer red, yellow and orange. When sauteed they have a sweetness which will offset the goats cheese. Lamb, ground, flavoured and browned could be sprinkled on the pizza instead of sausage. Or you could cheat one more time and find some North African sausage Merguez which is made with lamb and very spicy and flavored with garlic and mint. Fabulous alternative to pepperoni!! There is no Greek pizza per se. Not in the way other people think of pizza anyway.
Now to have a pizza with Greek flavor, put on it slices of tomatoes, crumble feta (there is only one type of feta and it is Greek all the rest is crap) cheese sprincle oregano and olive oil.
This is your basic pizza, (called "dakos" in Crete but is on a crispy rye bread not pizza dough.)

But you can keep going.... Add olives, garlic and rosemary.
My Greek pizza rocks. I start with plain tomato sauce (light application). Add onions and red peppers that I have roasted on my barbque. Sprinkle with feta cheese. Add a bit of oregano and bake as you would for any pizza. You can add olives if you like........Yummy.
Well, we tend to use alot of oregano, garlic, and rosemary.

For a Greek Pizza, I would use feta cheese(use the Bulgarian.. not the Greek.. the greek feta is very very tart, bulgarian is sweeter), kalamata olives, tomatoes, and a little garlic.

GREEK PIZZA

1 c. salad dressing Ranch
1 stick butter
1/4 tsp. garlic powder
1/2 c. chopped ripe olives
1/2 c. green onions
2 c. Mozzarella cheese
1 to 2 c. chopped ham
1 lg. loaf french bread

Set aside 1 cup of cheese for topping. Blend together salad dressing and butter until smooth. Add remaining ingredients and mix. Cut french bread lengthwise. Spread mixture on bread. Top with cheese. Cut bread into bite size pieces or slices before heating. Bake at 350 degrees approximately 10 minutes or until cheese melts.


GREEK PIZZA

1/2 lb. Phyllo dough (1/2 pkg.)
Olive oil
10 oz. fresh spinach (cleaned and trimmed)
1 lg. onion
3 cloves garlic, mashed
1 med. tomato, sliced
1/2 tsp. dried basil
1 tsp. dried oregano
2 tsp. dried thyme
or 1/2 oz. fresh herbs of choice
1 lb. shredded Mozzarella
8 oz. feta cheese, crumbled
3 tbsp. bread crumbs

Optional:

8 oz. sliced fresh mushrooms or
Sliced pitted black olives

Preheat oven to 400 degrees. Grease 11x9 shallow cookie sheet. Lay out sheets of phyllo dough on pan, brushing each layer with olive oil, before laying down next layer. Roll the edges to make a shell (to hold the filling). Set aside.
In blender or food processor, finely chop spinach. (If using fresh herbs, add them with the spinach to be chopped.)

In large skillet, heat a little olive oil, stir in garlic and onions. W hen onions are soft, add spinach and herbs. As spinach cooks, add bread crumbs to absorb extra moisture. Once spinach is limp, set aside. (Grind black pepper to taste.)

Spoon filling onto crust leaving 1/2 inch from all 4 edges. Place mushroom and olives on top if desired. Sprinkle half the Mozzarella and all of the Feta cheese over filling. Arrange sliced tomatoes over cheese, then sprinkle remaining Mozzarella over tomatoes. Bake 35-40 minutes until bubbly.


Greek Pizza with Spinach, Feta and Olives
INGREDIENTS
1/2 cup mayonnaise
4 cloves garlic, minced
1 cup crumbled feta cheese, divided
1 (12 inch) pre-baked Italian pizza crust
1/2 cup oil-packed sun-dried tomatoes, coarsely chopped
1 tablespoon oil from the sun-dried tomatoes
1/4 cup pitted kalamata olives, coarsely chopped
1 teaspoon dried oregano
2 cups baby spinach leaves
1/2 small red onion, halved and thinly sliced
DIRECTIONS
Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.
