I make Aloo Ghoo, Dal, Paneer Saag and Bindi Masala in the microwave, the trick is making sure you have a large enough microwavable dish to accomadate the food, I am a former chef and have tried many thing both Indian and Western in the micro.

For anything with potatos, cut them in uniform sizes they cook faster, I use red lentils as they cook fast and I want them to break down, even with meats you can do it, but I am like you I prefer veggie options.

Make sure you have all the ingredients cut, along with have all your spice, one caution, fresh or dried chilis will get stronger in the cooking process, and I use boiling water from the kettle, it speeds up the food to get to the boiling point.

Stop it every so often and stir it, it will not burn like the oven or stove but will cook faster if uneven in the cooking vessel.
I like chana masala. I buy the spice mix from an Indian store, and use canned chick peas. Just cook everything in the microwave. It also works well in a crock pot.
FIrst, I have just tried Dal in the microwave and it worked. I was not sure that it would. YOu can add oil to it, though and your spices. We have been successful at cooking rice in the microwave, also. With the rice, you add twice as much water and you keep adding more with the dal: start at twice as much water. I have not figured out how to fry Parhatas in the microwave. We can do potatoes, but they don't come out very crisp. Covering retains the sauce. I think someone gave me a website: www.indiancurry.com That might help. Also, if you are in a pinch and want Indian food, your Indian market has microwavable dishes. I am going to try suji halva in the microwave soon. I am sure that it cam be done.
Someone, on this forum, (thanks much) told me how to make Kheer in the crockpot. I thoroughly enjoyed Kheer!
I would love to also figure out how to make aloo-kee-tiki in the microwave, but I doubt that this is possible, also.
