Chili is medium hot, taste is incredible. Made on an enchilada plate, put into oven to melt cheeze, serve with tortilla chips around enchilada. MMMMM.

Answer:
Here's how I make mine.

1 bag dried red chilie pods, boiled and purreed, prepared according to directions OR 1 pint frozen red chilies prepared according to directions. Or 1 20 oz can enchilada sauce
1 package corn tortillas (10)
oil for frying
2 cups cooked chicken, shredded
1/2 onion, minced
1 clove garlic minced
1 tbsp butter
2-3 cups cheddar or mexican cheese mix

Saute garlic and onions in butter. mix with shredded chicken. Heat oil to cover the bottom of a large skillet to almost smoking. fry the tortillas in the oil about 3 seconds a side to soften. Layer half of the tortillas in the bottom of a casserole dish,spoon in half of chicken mixture,cheese, top with remaining tortillas, red chilie sauce, and more cheese

Bake at 350 for about 30 minutes or until cheese is melted and gooey

You can use shredded or ground beef in place of the chicken.
there are several canned enchilada sauces ,old el paso is one . otherwise get you sone dried chiles , colorado or guajillo , or a mix ....rehydrate them in hot water . put in a blender , puree . strain it thru a very fine strainer , add garlic and salt , a little cumin . simmer 15 mins . put a little oil in a pan , fry the tortilla very briefly on each side 15 seconds or so . transfer to sauce pan . get them covered in sauce either pancake style [easier] or roll them up with a little ingredient inside , bake 15 mins at 350 ...maybe a fried egg on top . damn i am now hungry . god bless josephina hopper
