Insalata Caprese is always good - layered slices of fresh mozzarella, ripe tomatoes, and fresh basil drizzled with good olive oil, sea salt, and cracked pepper. Some like it with a little balsamic vinegar, too.
A simple salad with arugala, roasted red peppers, grilled (and chilled) mushrooms, and goad cheese crumbles would be good.
For a hot appetizer, try roasted asparagus spears wrapped in prosciutto.

Other vegetables you can add would include cauliflower roasted and tossed with a bit of hot pepper, garlic, and raisins; carrot slices lightly steamed and tossed with lemon juice, parsley, olive oil, salt, and maybe a pinch of cumin (for a Moroccan touch); and blanched broccoli rabe tossed with garlic and olive oil.
