Jamaican Beef Patties

Nicely spiced and not difficult to make. Use a little gadget for making perogies that cuts the circle, folds the pastry in half>------------------------------...

This one seems to be a little easier, less steps, but perhaps more ingredients:

JAMAICAN BEEF PATTY

INGREDIENTS:


PASTRY
2 cups Flour
1/4 teaspoon Salt
1/2 tablespoon curry powder
1/4 cup Solid shortening
1/4 cup (1/2 stick) margarine
1/3 cup Cold water

--Sift the flour, curry powder and salt into a large bowl.
--Cut in the shortening and margarine until crumbly.
--Add the cold water to make a stiff dough.
--Lightly flour a wooden cutting board and roll out the dough until about 1/8-inch thick.
--Cut out 8-inch circles.
--Cover with wax paper or damp cloth until ready to use.
--You can place the dough in the refrigerator overnight. If you do refrigerate, remove the dough at least 15 minutes before using.

MEAT FILLING
2 tablespoon oil
1 Small white onion, Finely chopped
1/4 teaspoon Chopped Scotch Bonnet pepper
1/2 lb. Lean ground beef
1/2 teaspoon Salt
1/2 teaspoon Freshly ground black pepper
1/2 teaspoon Curry powder
1/2 teaspoon Dried thyme
1/4 cup Breadcrumbs
1/4 cup Beef or chicken stock
1 Egg, beaten
1/4 cup Water

--In a heavy skillet, melt the margarine and sauté the onion and Scotch Bonnet Pepper until they become limp.
--Add the ground beef, salt, pepper, curry powder and thyme and mix well.
--Brown the meat for about 10 minutes, stirring occasionally.

--Add the breadcrumbs and stock and combine all the ingredients well.
--Cover the skillet and simmer for about 10 to 15 minutes, stirring occasionally.
--When all the liquids have been absorbed, the filling is ready. It should be moist but not watery.
--Remove the skillet from the stove and preheat oven to 400 degrees F.

--Uncover the dough circles and place 2 to 3 tablespoons of filling on half of each.
--Moisten the edges of the dough with water and fold the dough circle over the meat filling.
--Pinch the edges closed with a fork.
--Lightly brush the pastry with a mixture of the egg and water. ---Bake on a lightly greased baking sheet for 30 to 40 minutes or until the pastry are golden brown.

Serves: 10 Patties

3 pounds lean ground beef
2 cups seasoned bread crumbs
1 (28 ounce) can tomato sauce
1 bunch (1-inch) pieces green onions
1/4 cup soy sauce
1/4 cup Maggi? liquid seasoning
1 tablespoon salt
1 tablespoon pepper
1 teaspoon vinegar-based hot pepper sauce
2 recipes pie crust pastry
2 eggs
1/4 cup water
DIRECTIONS
In a large bowl, mix together the ground beef, bread crumbs, tomato sauce, green onions, soy sauce, Maggi seasoning, salt, pepper, and hot sauce. You may need to use your hands. Set aside.
Preheat the oven to 425 degrees F (220 degrees C).
Roll out the pie crust dough to 1/8 inch thickness, and cut into 6 inch circles using a large coffee can. Place a heaping tablespoon or slightly more of the meat mixture into the center of the circle, and fold over to make a half circle shape. Crimp the edges together using the tines of a fork, and place the pies on baking sheets. The pies may also be frozen at this point. Whisk together the egg and water in a small bowl using a fork. Brush the egg wash over the tops of the pies.
Bake for 30 to 40 minutes in the preheated oven, until golden brown. If you are baking frozen pies, add an additional 10 minutes.

JAMAICAN MEAT PATTIES:

Serves 4

Ingredients:

1 can Pillsbury Grands Biscuits
1/2 lb. ground beef
2 stalks celery
1 carrot
1 onion
2 cloves garlic
3 tablespoons dark curry powder
1 tablespoon sugar
dash vegetable oil
1/4 cup water
salt and pepper to taste

Peel and finely chop carrot, celery and onion.
In a large skillet, warm oil and add chopped vegetables, minced garlic, and salt and pepper.

Cook until vegetables are done, then add ground beef, curry, water and sugar. Cook until beef is completely done and all meat and veggies are tender.

One at a time, spread each biscuit into a 6 inch diameter thin circle of dough. Place a portion of meat in the middle of a stretched out dough circle, then fold over, enclosing meat within the biscuit and creating a half moon pocket filled with meat. Close by pressing together using a fork to seal. Continue until all biscuits are used.

Bake on ungreased an cooking sheet for about 15 minutes, until golden brown.
