Spanish Baked Chicken Recipe
1/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoons oregano
1 teaspoon salt
1/2 teaspoon garlic powder
Dash of pepper
3 bay leaves
1/2 cup golden raisins
1/4 cup sliced pitted green olives
3 pounds chicken parts
2 Tbsp brown sugar
1/2 cup dry white wine
1 In a medium bowl combine the olive oil, vinegar, oregano, salt, garlic powder, pepper, bay leaves, raisins and olives. Prick the skin of the chicken with fork tines and add to the marinade, coating well. Cover and refrigerate overnight.
2 Preheat oven to 350°F. Place chicken in a 12x8x2-inch baking dish. Combine wine with the marinade and pour over chicken. Sprinkle chicken with brown sugar. Bake uncovered at 350°F, basting occasionally, until chicken is tender, about 50 minutes. Remove bay leaves.

Here's one for Steak marinated with garlic and onions.
Steak & Onions (Bistec Encebollado)
4 - 6 Garlic Cloves
2 Boneless sirloin steaks
2 Tablespoons of Olive Oil
1 Tablespoon vinegar
? teaspoon of salt (I don’t measure. If you think this is too much, add less)
1/4 teaspoon black pepper
2 onions
Peel and cut up garlic and put in Garlic press.
Crush Garlic and mix with vinegar and olive oil, salt and pepper.
Mix well – and marinade steak with mixture.
Slice onions into onion ringlets and add to steak – Lay steak flat, cover with onions, lay 2nd steak over that and cover with onions, etc. Put in refrigerator and let marinate for about 1/2 hour.
Heat pan put on medium high, and sear steaks in pan (Make sure your pan is hot so that the steaks will sear. The aroma will be awesome).
Lower flame and put both steaks in pan. If necessary, add a little water to steak (a couple of tablespoons). You will have a gravy to dip your fried plaintains into. Cover and let it cook for about 15 – 30 minutes, depending on how you like it. Add onions about 20 minutes after steak has been cooking.
As a side dish with this steak we usually make Yellow Rice and Peas (Arroz con Gandules) and/or some fried green plaintains.
