Hi I recently went to a local Thai restaurant and had a wonderful dish they call Rama Spicy. Basically its a sweet, salty, and spicy ground meat dish served with flour wraps. The meat mixture has green onions, regular onions, jalapenos, and cilantro that I could see. Its not laab, larb, or larp. I am pretty sure I could taste anise, cumin, and ginger or other citrusy flavor. If you have a recipe for this you could share I would greatly appreciate it, or at least if you could give me a name for it so I might have an easier time trying to find it. Thanks for any help you can give me.

Sounds like pad krapao (sweet basil stir fry). I'm Thai, and I have NEVER seen it served with flour wraps. It's sacrilege to not eat rice. Sounds like your fave restaurant is adapting to farang tastes.

Anyway, get a bundle of sweet basil, a pound of ground pork (to be traditional, but ground turkey works, too), nam pla, crushed bird chilis (two or three) and a little bit of stir fry oil (I like olive oil 'cause I'm somewhat health concious -- true Thais would use rendered lard).

Instructions: throw in wok over hot flame. Stir and brown. Thai food is mean to be simple and imprecise.
BIG WALT'S SPICY BEEF DIP

1/4 c. finely chopped onion
1 clove garlic, crushed
1/2 c. finely chopped green pepper
1 1/2 tbsp. salad oil
1 lb. ground top round
1/4 c. ketchup
1/4 c. tomato paste
1 tsp. salt
1/4 tsp. pepper
3/4 tsp. sugar
1/2 tsp. oregano leaves
2 (3 oz.) pkgs. cream cheese, softened

Saute first 3 ingredients in hot oil for 5 minutes. Add meat. Cook, stirring occasionally, until meat loses red color. Mix in next 7 ingredients. Cover. Simmer 10 minutes, stirring occasionally. Serve warm with crackers or party rye bread. Makes approximately 2 1/2 cups dip.
