This is great with chicken or seafood! I love this recipe!
1 ripe, firm mango, peeled and cut into small dice
1 red onion, very finely chopped
1 red finger chile pepper, seeded and finely chopped
2 heaping tablespoons chopped fresh flat-leaf parsley
2 heaping tablespoons chopped fresh cilantro leaves
2 spring onions, very finely sliced
1 lime, juiced (use the lime juice from the zested lime)
5 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
In a medium bowl, combine mango, red onion, chile pepper, parsley, cilantro, spring onions, lime juice, and olive oil. Season, to taste, with salt and pepper. Set aside at room temperature to allow the flavors to meld.

1/2 medium red onion, finely chopped
1 Jalape?o chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste
Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
no it's so much simpler than that you simply put hothot salsa (pace) in a bowl and add a pinch of nutmeg. then you get out the mangos and peel them. your gonna want to either buy the salsa without any green peppers or simply remove them. anyway you finely chop the mangos up into about 1\4 of an in. by 1\4 of an in. squares you add the squares to the salsa wich will take away from the spiciness but if you use mild salsa it will be too mango-ee so then you continue to add water till it's at the right consistancy. enjoy

1 mango, cubed
1/4 cup coconut
1/4 cup vidalia onions, red onion
1/4 cup cilantro, chopped
2 tablespoons jalapenos, seeded minced
2 tablespoons lime juice
Mix ingredients together.
Enjoy.
