oh, and one more item...lettuce wrapped or spinach wrapped sandwiches...there was a chef that used to be featured on t.v that would make these terrific and mouth-watering sandwiches with lettuces and such..they would have all types of meats and stuffings in them...would anybody know what cookbook I need to look for,(I think that she had a cookbook out!) and or what this chef's name is?

Celery Root Salad (Selleriesalat)
2 Servings
1 md celery root (3-inch-diameter),peel,ed,
1 washed,and thinly sliced
1 c beef stock
2 T to 3 tb salad oil
1 wine vinegar
1 salt
1 pn sugar
1 sm onion,finely chopped
Put the freshly sliced celery root immediately into the stock which should be flavored with 1 tablespoon each oil and vinegar, 1/2 teaspoon salt, the sugar, and the chopped onion. Cook for about 20 minutes - until the celery root is quite tender and the liquid has almost boiled away. Season the celery root and beef stock with the remaining oil and a dash or two of wine vinegar, as well as with salt if you wish. Note: If the salad is to be served as an appetizer, mix in some coarsely chopped walnut and garnish with a few walnut halves. Makes 2 - 3 cups.
Dolmades (Stuffed Grape Leaves)
This traditional Greek meze, or appetizer, combines a filling of rice, ground beef, and herbs stuffed in grape leaves, the versatile Mediterranean wrapping with a lemony tang. Serve as an appetizer, or with salad and bread as a main course. For vegetarian dolmades, omit the meat.
Ingredients
1/2 teaspoon(s) Cumin, ground
1/2 teaspoon(s) Cinnamon, ground
12 Grape leaves
1 cup(s) Long-grain rice
1 tablespoon(s) Mint, dried, crushed
3/4 to taste Thyme, dried
Extra-virgin olive oil, for drizzling
2 cup(s) Chicken stock
to taste Sea salt
1/4 cup(s) Fresh parsley, chopped
1/2 cup(s) Onion, chopped
1/2 pound(s) Ground lamb or beef
1/2 cup(s) Green onions, chopped
1 1/2 tablespoon(s) Dill, chopped
to taste Black pepper, freshly grated
Instructions
Combine onions, dill, rice, meat, parsley, mint, green onions, cumin, cinnamon, salt, pepper, and thyme; reserve.
Rinse the grape leaves, and remove hard stems.
Dry the leaves and lay them, vein-side-up, on a plate.
Place 1 tablespoon of the mixture on each leaf and roll, starting at the end point of the stem. Fold the sides of the leaves over towards the center and roll them tightly. Take extra leaves and line the bottom of a pot.
Arrange the rolled leaves on top of each other in the pot. Cover with remaining leaves. Drizzle dolmades with olive oil, and add stock. Cover dish, and simmer for about an hour. Serve dolmades hot, cold, or at room temperature.

It was'nt Graham Kerr the Galloping Gourmet, although this was a long time ago. Jamie Oliver does some good recipe and dishes with interesting sandwiches and fillings. Made my mouth water, love greek food and the dolmas (veg) with the rice and sultanas, with coriander, parsley, and tomato. I think many Greek recipe books will feature. Celery, I chop up
with the herbs and maybe rice/buckwheat/cous cous/quinoa with seasoning and fresh lime/lemon juice. Bright wishes for a great days cooking and munching. Libithina x
