In the mall in my town, there's a japanese themed fast-food joint in the food court. They prepare beef/chicken/shrimp with fried rice or noodles with stir-fry veggies. They cook this>2)----------------------------...
"Japanese style teriyaki sauce/marinade that uses pineapple skins, apples and mirin."
INGREDIENTS
3 cups soy sauce
1 1/2 cups mirin (Japanese sweet wine)
1 orange, juiced
6 ounces chopped fresh pineapple with skin
1 Granny Smith apple, cored and chopped
2 cloves garlic
1 teaspoon grated fresh ginger root
4 tablespoons white sugar, divided
DIRECTIONS
In a saucepan, combine soy sauce, mirin, orange juice, pineapple, Granny Smith apple, garlic, ginger, and half of the sugar; bring to a boil. Reduce heat, and simmer 20 minutes. Adjust sweetness to taste with remaining sugar. Strain through a fine mesh sieve; cool.
Try soy sauce, sugar, a splash of wine, red pepper paste, ginger, and garlic. Or else dark soy sauce, white sugar, sake, and mirin wine (or brown sugar, ginger, mirin, sake, and soy sauce). The latter two are Japanese teriyaki sauces and marinades (respectively), the first is a Korean marinade that will possibly make you forget about the teriyaki you were looking for. Play around with the amounts and the exact ingredients. I guarantee you will find something that pleases you. Or just ask someone who works at that particular restaurant for the recipe.
