You do not cook calamari for long. The longer you cook it the tougher it gets. It only needs a minute or two.
we greeks know how to cook calamari lol you should try soaking it in milk or in another seasoning
younger the calamari, the more tender. that's why most chefs & calamari lovers prefer baby calamari.
