I love that cheese dip....anyone know how to make it at home? I THOUGHT you used milk, butter and monterrey jack cheese. But I tried those in a combination and it wasn't really good :P Does someone have a good recipe or know how to make it?

Answer:
Queso Blanco

1 c Asadero cheese; shredded
4 oz Jalapenos, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt

Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.

(If this is made with julienned poblanos, it's called
"queso con rajas de chile").
You need to use queso fresco cheese, not jack. I use queso fresco, one can of rotelle tomatoes, and one can of chili with no beans, plus a bit of milk. heat together and enjoy!
I think you are using the wrong kind of cheese. I think you need to use goat cheese (believe it or not). I love that mexican cheese dip!
use white american... lower melting point ...add peppers and some spices...melt it in a stainless bowl over a pot of boiling water
On very low heat, melt down Asadero white cheese. Chop up some green onion and tomato and put on top.
You could add a little garlic salt or powder or chorizo. Garnish with fresh cilantro.
Asiago cheese is good too.

here's the easiest. melted grated cheese, you choose your
favorite{cheddar, jack.the mexican cheese mentioned in
earlier response} i would mix them in a sauce pan with a
jar of your favorite picante sauce. cheesey dippy
