I recently made a mince meat from scratch (our next door neighbor use to say "scraps"). Have you or your family done this? How did they do it, what made it unique, and where did they come from (state or country)?

Answer:
My family is from Germany too and this is the recipe that has been handed down. In our family it was made from any game that was avaliable. These days we can afford to be choosy.

Mincemeat

3 pounds green tomatoes, chopped and drained
1 cup cider vinegar
3 pounds tart apples, chopped
4 pounds firmly-packed brown sugar
2 teaspoons cloves
1 teaspoon nutmeg
1 cup ground suet (raw meat fat)
1 pound ground venison, elk or beef
2 pounds raisins
2 teaspoons salt
3 teaspoons cinnamon
1/2 cup butter or margarine
Rum or brandy to taste
In a large pot over medium-high heat, cover tomatoes with cold water; bring to a boil for 5 minutes. Drain.
Reduce heat to low. Add cider vinegar, apples, brown sugar, cloves, nutmeg, suet, meat, raisins, salt, cinnamon, and butter or margarine; simmer 30 to 45 minutes. Remove from heat; add rum or brandy to taste.

Refrigerate or pack in hot sterile jars and seal.
My grandfather came from Germany and we used to make mince meat as children. We used meat (scraps) cut off the prime cuts, cut it into very small pieces, cooked it with fruits (dried) and seasonings. We then canned it - using a pressure cooker. In the winter months Mom made it into pies, Yummy.

These ingredients are similar to what we used:
3 cups golden raisins
3 cups raisins
3 cups currants or craisins
2 1/2 pounds apples ( any kind will do)
1 pound beef, cooked and minced
3/4 cup lemon rind
1 1/2 tablespoons cinnamon
1/2 teaspoon mace
2 teaspoons grated nutmeg
3 cups brown sugar, packed
2 teaspoons salt
1 quart apple cider
1/2 cup brandy (optional)
