bhel puri, a snack made of broken puris, a kind of cracker, sev, something like angel hair chow mein noodles, and chaat masala, a spice mix with black salt in it. It is often eaten with other things in it, like diced mango, chickpeas, three different kinds of chutney, a sweet /sour tamarind one, a green mint/cilantro one, and a hot sweet chili one.
pav bhaji - a kind of vegetarian sloppy joe. There's a filling of cooked, mashed, highly spiced vegetables with cauliflour and tomatoes, among many others. This is put on the pav, kind of like a hamburger bun, that's been fried in butter. Its served with another pat of butter on the vegetable mixture, and lemon or lime to sqeeze over it.
These are pretty much my favorites, too!

Tandoori breads and chaats are the most popular and most delicious in north India.
In the south, the daily staple has been idly and dosa with chutney, and a curry called sambhar. But people are growing out of it now, though. Uthappam is really delicous in the south... sort of a pancake made of flour and sprinkled with spices, onion and tomatoes.

Well well being a big country the cuisine is so varied that difficult to pen it down all here.
The North for it's tikkas and tandoors, the west for it's bhajis and behpuris, the south for it's sambhar and dosas, the east for momos and jhols.
India is a big country, depends what part you go to. The sub-cultures vary from state to state.
