OK, well, I'm doing French cuisine for a school project for junior high. It is a huge project that lasts all year that is all showed at a open house. I have to write a 8 page paper about franch cuisine and stuff. I get interviewed from the mayor and stuff like that. So, I want to have a portfolio at the open house with all my work. I'm trying to think of things to make, but I'm worried that they might now be french cuisine. So I was wondering if anyone could give me any advice on what to do. I mean, I want to be able to make a few 5 course meals and stuf... the thing is im too worried that is wont be french enough. What is french cuisine in the sence of what are the rules of actually calling it "french cuisine", etc. Please give me some tips and info. THANK YOU SO MUCH

Just go to the library and check out french cuisine cookbooks.
I would recommend researching menus of French restaurants on the Internet. I would also do a couple of dishes that are known for being French like, Escargot (snails), Brioche (bread), and Crepes (thin pancakes). The French are also big on wine so I would include information on what kind of wine you would serve with each course. Good luck
I would suggest adding a course of cheeses, maybe a salad with some "foie gras" if you are not against it for the "entrée" or a "terrine" of some kind. Rabbit, duck, or fish for the main dish and "mille-feuille" or crepes for dessert. You could also look for a "fondue bourgignonne" or a "quiche lorraine".

Good luck
