potato: alu
spinach: saag (or palak)
Alu Saag
Ingredients:
6 med potatoes, peeled and chopped (1" pieces)
6 cups baby spinach leaves
1 large onion, chopped
2 small tomatoes, chopped
2 cloves garlic, minced
1" piece of ginger, peeled & minced
2 fresh red thai chilles, finely minced
1 1/2 tsp mango powder
1 tsp red chili powder
1 tsp ground coriander
1 tsp ground cumin
6 fenugreek seeds (methi)
? tsp kalonji (onion seeds)
4 curry leaves
4 tbsp veg or canola oil
1 tsp salt (to taste)
1/4 cup water
4 tbsp cilantro leaves, finely chopped
Method:
In a large skillet, heat the oil on high and add the onion, red chilies, ginger and garlic. Stir fry until slightly golden in color and add the curry leaves, fenugreek seeds and kalonji. Stir fry until they have changed colour (2-3 minutes).
Reduce the heat to medium, add the tomatoes, chili powder, ground coriander, ground cumin, mango powder and salt.
Stir-fry for an additional 3-5 minutes, add the spinach and the potatoes. Continue to stir-fry for
5-6 minutes. Add the water, cover and cook over low heat up for 10-12 minutes.
When the potatoes are cooked through, garnish with cilantro and serve.
palak paneer.... i think this is it- it also has cheese or tofu in it
In response to the previous answer, spinach also translates into "palak", so it could also be called, "aloo palak".
Alu sag.. Alu means potato and sag means vegetables.
