Cook and debone a chicken pour a can of red enchilada sauce in with the shredded chicken set aside in saucepan heat up 2 more cans of red ench. sauce add diced onion take off of heat and pour a little in casserole dish then take corn tortillas(I like the red ones if you can find them)dip in sauce for a few seconds (to soften so they don't tear) put spoonfull of chicken in roll up put in casserole dish continue until pan is full then pour extra sauce on top and top with Mexican blend shredded cheese and bake for 30min @350!Enjoy!!!
