    Need help on an easy Lebanese recipe.?

Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

SHEIK EL MAHSHI (EGGPLANT CASSEROLE)

1/2 cup pine nuts
1/2 cup butter
1 lb ground beef or lamb
1/2 tsp. pepper
1/2 tsp. cinnamon
1 tsp. salt (or to taste)
1 lg. chopped onion
3 lg. eggplants
4 Tbsp. butter
3 cups tomato sauce
2 Tbsp. dry mint
water

METHOD

1. Peel eggplants, cut stems off. Slice into 1/2 - 3/4 inch circles and set on cookie sheets. Sprinkle salt all over to "sweat them." This softens them. Set aside while you prepare the filling.

2. Sauté pine nuts with 2 Tbsp. butter until golden. Add meat, salt, pepper and cinnamon, stir well. Add onion and saute until onions are limp and meat is brown.

3. Squeeze water out of eggplant slices' and place in frying pan with 4 Tbsp. butter, browning them. Remove and place a layer on bottom of 11"X15" baking pan.

4. Spread meat mixture over eggplant slices. Place remaining eggplant slices on top of meat.

5. Pour tomato sauce over all, adding water to just below top of eggplant.

6. Sprinkle mint over top. Cover and bake 1 hour at 350 F.

7. Serve from pan or gently remove with a lifter onto a platter.

8. Serve on top of Lebanese Rice.

Lebanese Chicken Wrap Sandwich
4 servings 25 min 10 min prep

3 boneless skinless chicken breasts, sliced into bite size strips
2 tablespoons olive oil
1 small onion, chopped
1 tablespoon garlic, minced
1/4 cup lemon juice
1 tablespoon cumin
1 teaspoon oregano
salt and pepper
4 burrito-size flour tortillas
1/2 cup mayonnaise
3 tablespoons lemon juice
3 tablespoons garlic powder
1 tomato, chopped (optional)
1 small onion, chopped (optional)
1 cup lettuce, shredded (optional)
3 tablespoons tahini sauce (optional)

In a large nonstick pan, heat oil and then add the chicken, chopped onion, minced garlic, 1/4 cup lemon juice, cumin, oregano and enough salt and pepper to taste. Make sure chicken is well cooked and browned.
In a small bowl mix the mayo, lemon juice and garlic powder.
Heat flour tortillas by steaming in microwave for 1 - 2 minute covered in a damp paper towel.
Assemble wrap by placing one tortilla on a piece of alluminum foil, then fill with chicken, garlic mayo spread, and then top with the optional toppings of tomato, onion, lettuce and/or tahini sauce. Wrap closed with foil and twist foil end.

MHALLABIYEH
(rice cream)

1 liter milk
1/2 glass powdered rice
3/4 glass sugar
1 glass roughly ground pistacchios

Dilute the rice in a bit of cold water. Boil the milk and add the rice. Stir until the mixture thickens. Pour in cups and allow to cool. Sprinkle pistacchios on the surface before serving.

Tips
The rice can be replaced by starch, and the pistacchios by almonds, in which case the dessert is called ilmassiyeh ("diamonded").

Lebanese Lemonade

4 large fresh lemons
1 cup white sugar or Splenda granular, sugar substitute
6 cups water
2 fresh oranges, juice of, Squeezed (optional)
1 tablespoon orange blossom water (mazaher)
