A friend gave me a jar of Olive Tapenade. I have never heard of this before. What do I do with it? How is it eaten?
Answer:
Buy some french or Italian bread from the bakery. Slice it into about 1/2 inch pieces. Brush some olive oil on the bread, then spread on the tapenade...put a slice of white cheese on top and broil it until the cheese is all melty. YUM!
The salty earthiness of black olive tapenade is the perfect complement for pasta, spread on crostini or bruschetta, or to top sweet red baked potatoes.
It is usually eaten on bread, but it's a great ingredient for an easy week day dinner. I like to saute' some chopped garlic and onions, add a jar of strained canned tomatoes, and toss it with some angel hair pasta, olive oil and the tepenade. You can add some grilled chicken to it too. It taste like a $20 pasta dish at a fancy restaurant.
Tapenade is just the French word for spread.
You can make a Cajun sandwich called a Muffaletta. The y are great and they are perfect to have for entertaining. If you make them on a large round sour dough bread, you can then slice it in slices like you would a pie. YUMMY!
