I think the first response is backwards. One finger poi is thickest, three finger poi is the most watery. Two finger poi is the best. The poi on the market today is so watered down that the poi becames mild and loses its sweetness. Two finger poi is the pefect consistancy to coat your food but not fill you up too quickly.
