You can buy a really good concentrate that you just add water and heat. Its from Wing Yip but I think some Sainsburys sell it. It's so good its just like a take away! these people sellon the internet so just google wing yip!

There's some debate over where what we call 'Chinese curry' actually originated from, but that's irrelevant! You can easily buy the base for the curry sauce you want from an Asian or Oriental food shop! I normally buy the blocks, but you can get it granulated too, usually called 'roux' (ルー) ... either way the instructions are more than likely to be in Japanese or some other Asian language, so I'd recommend getting advice from the shop-keeper on how to prepare it! If you're just using it for the sauce, the granulated version would be better - then you'd just boil some water and add the granules until the consistency is right when it boils! Keep stirring it though..!
Oh yeah, they come in different strengths / heats! 1 being the mildest, and 5 being the most spicy! They also come in different varieties, but as you'll have a limited choice in an import store it won't matter to you!

After opening the granulated roux packet, or using part of a block, seal well and store in the fridge. Unopened blocks or roux packets do NOT need to be refrigerated though.

If you want original Curry sauce, you should know that it's Indian in origin period. You will have to get all original methods of preparing curry in indian restaurants and cookbooks. For a "Chinese" type of curry, look to "Cantonese" (which is quite different) style restaurants or cook books. Peace.
