I have two recipies for this... one is small and easy and the other is larger and more difficult... well not that difficult.
1 small onion, thinly sliced and separated into rings
3 T. lemon juice
1/2 tsp. salt
1/8 tsp. ground red pepper
1 1/2 lb. new potatoes
6 oz. cream cheese, softened and cut into 1/2-inch cubes
1/2 C. half-and-half
2 small serrano chiles, seeded and finely chopped
1/4 tsp. salt
1/4 tsp. ground turmeric
Bibb lettuce leaves
12 Greek olives
3 hardboiled eggs, peeled and cut into quarters
Mix onion, lemon juice, 1/2 teaspoon salt and the red pepper; cover and reserve. Heat 1 inch salted water to boiling. Add potatoes. Heat to boiling; reduce heat. Cover and cook until tender, 20 to 25 minutes; drain and cool. Pare potatoes; cut into quarters. Heat cream cheese, half-and-half, chiles, 1/4 teaspoon salt and the turmeric over low heat, stirring frequently, until mixture is smooth, 10 to 12 minutes. Arrange potatoes on lettuce leaves. Spoon cheese mixture over potatoes. Drain onion; arrange on cheese and potatoes. Garnish with olives and eggs. about 6 servings.
number 2...:
6 russet potatoes, peeled boiled,and sliced.
4 eggs, hard boiled
9 ounces queso ranchero (or queso casero or feta cheese)
1 clove garlic, crushed
1 (12 ounce) can evaporated milk
2 tablespoons peruvian yellow chili paste (aji amarillo paste)
1-2 tablespoon olive oil
5-8 water crackers
For the potatoes:
Assemble lettuce leaves on a nice plate or platter.
Lay potato slices on top, trying to keep the round discs intact.
For the salsa Huancaina:.
In a blender container or food processor, place cheese, garlic, evaporated milk and aji paste, blend until smooth.
Add 2 yolks of the hard boiled eggs, and a few water crackers.
While blender is running, drizzle in 1 T of oil.
Check consistancy.
It should not be about the consistancy of thin cake batter.
If it needs more thickening, add more crackers and oil.
Check seasoning, if you are using feta cheese, it might not need salt, you can also add a bit more aji if you like it spicy.
To serve, pour sauce over potatoes and lettuce.
Garnish with remaining 2 hard boiled eggs, cut in wedges and black olives.
