I have an assignment for a class that requires us to cook a Peruvian dish to serve to the whole class. I would prefer a dessert, because it is easier to serve to the students.

Try making "Alfajores". They are Peruvian caramel cookies and can be sand-wiched with caramalized milk (dulce de leche) for younger children.Here you go,
Ingredients:
3/4th cup butter
1 cup Sugar
1 egg + 2 egg yolks
1 teaspoon vanilla
2 teaspoons grated lemon rind ( without the white part.)
1 1/2 cup corn flour
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
Directions:
1. Cream the butter with sugar and beat well.
2. Add egg and egg yolks, one at a time, beating constantly.
3. Add vanilla and lemon rind.
4. Sift together cornflour, flour, baking powder and salt.
5. Fold in and mix batter well.
6. Drop batter by small spoonfuls onto a greased baking sheet.
7. Bake at 350 degrees for 15 minutes. Remove immediately.
Sandwich the cookies together with sweetened milk dessert (dulce de leche). It is a caramalized milk sweet and available in stores selling mexican and argentinian food. If not, here's the recipe, takes quite long to make,
Dulce de Leche:
Ingredients: 1 can sweetened condensed milk
To proceed: 1. Preheat oven to 425°F.
2. Pour the sweetened condensed milk into an 8-inch round pie or square cake pan, and cover it with foil.
3. Place the pan in a shallow pan filled with one inch of water. Bake for one hour.
The milk will have transformed into a smooth, creamy, caramel-colored dulce de leche.

Flan
1 cup sugar, caramelized
6-10 eggs, well beaten
2 (14 ounce) cans sweetened condensed milk
2 (12 ounce) cans evaporated milk
1 teaspoon vanilla
1 dash cinnamon
Coat tube pan with caramelized sugar.
Allow to harden, then place pan in container with ice cold water until the caramelized sugar cracks.
Mix other ingredient in order, stir well and pour in mold.
Place mold in pan with 2" hot water in preheated oven.
Bake at 350°F for 1 hour or until firm.
Let cool, then invert& unmold.
if you dont know how to make the sugar;
Place the sugar in a medium-size heavy
skillet (not iron), set over moderately low heat, and allow to melt and caramelize to a rich golden
brown. Do not stir the sugar as it melts but do shake the skillet from time to time.
Try this :
RICE PUDDING (Arroz con Leche)
Ingredients :
? cup rice
3 cups water
2 cans condensed milk
1 can evaporated milk
? cup port wine
1 stick cinnamon
Powdered cinnamon
? orange (rind)
Preparation:
Wash rice. Boil in water for 15 minutes, with the orange rind and the stick of cinnamon until well cooked. Remove stick of cinnamon and orange rind.
Add both cans of milk. Cook over low heat, stirring constantly with a wooden spoon for 5 minutes.
Add port wine and cook 3 minutes more. Let rice cool for 10 minutes.
Pour into a dessert dish and sprinkle with powdered cinnamon.
( 8 servings )
