THIS RECIPE IS A ONE POT DISH. IT HAS SLICED TOMATO ON THE BOTTOM LAMB NEXT, EGG PLANT, CAULIFLOUR, CARROTS AND THEN IS COVERD WITH RICE. YOU NEVER STIR. THE LAMB IS SEERED WITH A SPICE? BEFORE LAYERING. I DONT KNOW WHAT THE SPICE IS CAN ANYONE HELP PLEASE THANKS

Everyone in the middle east makes their metlubeh or makloobah pronounced differently depending on the region differently. I make mine with either chicken or beef, I also only use eggplant by itself or eggplant with cauliflower.
There isnt a "rule" to it.
As for the spice that the meat is seered in, I cannot give you a diffinite answer, because I prepare mine differently.
The two main spices of this dish is.Allspice and nutmeg.However the allspice is usually the dominant of the two.
This is how I cook my metloobeh.
I slice and salt my eggplant, before fryin(presalting or presoaking of the eggplant will minimize the absorbtion of oil when frying)
I season my chicken or beef, and then boil with bay leaves and onions.
Once the meat is done, I chop a couple of cloves of garlic up, add nutmeg, allspice, maggi cube, and sometimes a pinch of cinnamon, then I assemble my metloobeh.
I place the eggplant and cauliflower and sometimes a pack of mixed vegitables, then top it with the rice. Then cook until done.
This is my technique, however it can vary.
go to www.recipezaar.com and try there. i tried and couldn't find "mecluba" but i'm sure if you go through the recipes that come up if you type in "lamb" or the ingredients, you may find it but with another name. good luck.
I don't know what the spice is, but I'm from the middle east, so my mom makes mecluba all the time. I'll ask her and I'll try to email you tomarrow.

I LOVE MECLUBA!
Mecluba means upside down! No special spices are added. First you cook the rice in the normal way. Fry the sliced aubergines, potatoes, sliced onions and sliced tomatoes. Cook the meat by first boiling it till it is done, then fry it slightly. Put all the above in layers at the bottom of the pot then add the cooked rice and press firmly. Leave on very low heat so that the rice and all the other fried ingredients are hot. About half an hour. Remove the lid and put a large round tray instead of the lid and turn the pot. It is a very rich dish but nice! Hope you like it.
PS You can make red rice by adding a blob of tomatoe puree to it.
