I am not much of a cook and I hear it is a rather hard item to make but I just had it at a potluck and I am hooked.

Answers:
2 tbsp vegetable oil
1 lb lean ground pork
2 cloves garlic, minced
1 onion, sliced
1/2 lb green beans, julienned
2 carrots, julienned
1 tbsp soy sauce (optional)
1 cup bean sprouts (optional)
15 lumpia wrappers, square or round
Salt to taste

Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste.
To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use.

Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with sweet sour or vinegar and garlic dipping sauce (recipes below).



Vinegar Dipping Sauce
1/2 cup white vinegar
3 garlic cloves, crushed
Salt and cracked black pepper to taste


Mix together all ingredients.
Makes 1/2 cup


Sweet and Sour Sauce
1/4 cup white vinegar
1/4 cup soy sauce
1/4 cup ketchup
1/2 cup water
2 tbsp sugar
salt to taste
1 tbsp cornstarch dissolved in 2 tbsp water


In a small pan combine vinegar, soy sauce, ketchup, water, sugar and salt, and boil for 2 minutes. Thicken with cornstarch mixture. Makes 1 1/4 cup

This is good with either pork or shrimp. Be sure to set aside enough time to prepare the rolls.

1 pound ground pork or chopped shrimp
1/4 cup chopped water chestnuts
1/2 cup finely chopped onions
1/4 cup minced fresh mushrooms
2 egg yolks
3 teaspoons soy sauce
1/4 teaspoon garlic salt, or to taste
Pepper, to taste
Vegetable oil
Fresh spring roll wrappers
Sweet and Sour Sauce with Apricots

Mix all of the filling ingredients in large bowl. To test the filling, fry a spoonful in a pan with a little oil, and taste to determine if seasonings need adjustment.

To roll, place wrapper in front of you with the corners turned so it forms a diamond rather than a square. Spoon 1 teaspoon of filling on the quarter of the wrapper nearest you and roll the point away from you and around the filling, folding in the sides and pinching them together as the filling rolls past them. As you complete the roll seal the edges with water. Repeat until all the wrappers and filling has been used up. Deep fry in oil until golden brown.

Serve hot with Sweet and Sour Sauce.

Beef Lumpia

* 1 lg. bag frozen green beans (French style)
* 1 1/2 pound ground beef, chicken, shrimp, or pork, chopped
* 2 large carrots
* 1/2 med. head cabbage
* Salt
* Accent
* 1 onion
* 2 cloves garlic
* Soy sauce
* 25 lumpia wrappers

Directions:

Wash frozen green beans in cold water; let drain. Cut carrots in 1 1/2 inch julienne slices; set aside. Shred cabbage. Chop onions. Mince garlic. In medium frying pan, cook meat on medium heat with minced garlic.

Sprinkle with salt and Accent and 1 tablespoon soy sauce. Add more to taste. Add onions. Stir 2 minutes. Add green beans and carrots. Stir 5 to 10 minutes on medium heat. Add cabbage. Stir 3 to 5 minutes. Season with more soy sauce and Accent per taste. Drain cooked filling in colander. Let cool for 15 to 20 minutes. Roll in lumpia wrappers. Fry in preheated vegetable oil on moderate high heat. Drain fried lumpia on paper towel to absorb grease. Freeze unfried lumpia up to 2 weeks in air-tight containers.

Note: Do not fry until ready to eat. May warm after fried.
