Description Recipe Pepper Rasam (Kurumullake Rasam)
Ingredients
Black Pepper Corns 2 Teaspoon
Cummin Seeds 2 Teaspoon
Lentils 1 Tablespoon
Dried Red Chillies 2 Piece
Asafoetida 1 Piece
Tamarind 1 Tablespoon
Mustard Seed 1 Teaspoon
Curry Leaves 5 Leaves
Oil 1 Tablespoon
Preparation Method
Toast the pepper, lentil, chillies, together in a pan till they become golden brown. Add cumin seeds and grind them together to a powder.
In a separate bowl, mix the tamarind paste (if not paste remove the pieces of taminind after 15 minutes in the water) in 4 cups of warm water. Add salt and Asafoetida, boil the water for a few minutes. Mix in the powder from above and boil for about 5 minutes.
TOMATO RASAM
Ingredients:
3-4 tbsp. Red Gram Daal
4 large tomatoes (finely chopped)
1/2 tsp. Garlic paste
1-inch piece of ginger (finely chopped)
21/2 cups water
1tsp Garlic grated
1 or 2 green chilies finely chopped
Coriander leaves finely chopped
Salt to taste chili or pepper powder to taste.
1/2tsp. turmeric powder
1tsp. mustard seeds
1tsp. cumin seeds
1-2 whole dried red chili (halved)
A pinch asafetida
Few curry leaves
2tbsp. oil
Method:
Pick, wash and pressure cook the daal and keep side.
Heat 2 tbsp. oil in a pan and add mustard seeds, cumin seeds, curry leaves, dried chili and asafetida.
When mustard seeds start to splutter add garlic, ginger, tomatoes and green chilies.
Add salt, chili & turmeric powder and a cup of water.
Simmer for 5-6 minutes and add the cooked daal and 11/2 cup of water and bring to boil.
Serve hot garnished with coriander leaves.

Garlic Rasam
Ingredients
Tamarind - size of a very small lemon
Toor dhal - 1/2 cup pressure cooked and mashed and diluted
Sambar podi - 2 tsp
Garlic - 7-8 big pods
Tomato - 1 big
Jeera (cummin) - 3/4 tsp
Pepper corn - 1/4 tsp
Turmeric powder - a little
Hing (asafoetida) - a pinch
Curry leaves - a few
Coriander leavers - a handful
Method :
Soak tamarind in water and extract moderate thick pulp.
In 1 tsp oil fry jeera, pepper and garlic until garlic turns light brown and jeera splutters.
Cool and grind the mixture with tomato in a blender.
Boil the tamarind extract with turmeric powder, sambar podi and hing and salt.
Pour the ground mixture and bring to a boil.
Now add the diluted dal and boil again. (I add a little sugar to taste better).
Season with spluttered mustard seeds (and /or jeera) and curry leaves in ghee.
Garnish with coriander leaves at the end.
PS : Those who do not have sambar powder include 2 tsps of dhania (coriander seeds), 1 tsp toor dhal when frying garlic and jeera etc.
Neem Rasam
neemflower - 3 tsp
red chili - 1
mustard - 1 tsp
salt - 3/4 tsp
asafoetida - 1/4 tsp
ghee - 3 tsp
tamarind - lime size
1. Place ghee in saucepan & add mustard seeds. When they start
popping, add asafoetida, 1 whole red chili and 3 teaspoons dried neem flower (veppamboo).
2. Add tamarind juice and bring to boil.
3. Add water to make the liquid about 3 cups. Add 1/4 teaspoons rasam powder [***see below] and 3 bunches of curry leaves.

Whole black peppers - 1 cup
Toor Dal - 1/2 cup
Cumin seeds - 1/2 cup
coriander seeds - 1/2 cup
Slightly heat without adding oil in a fry pan and grind the above ingredients into a nice powder.
