we love it raw with a ranch sauce sauce to dip it in or in a salad
i love jicima, grew up with it. my mom would just cut them in sticks and we'd dip them in ranch. it's most commenly used in the US as a slaw.
Jicama Slaw
1 large jicama, peeled and finely shredded
1/2 Napa cabbage, finely shredded
2 carrots, shredded
1/2 cup freshly squeezed lime juice
2 tablespoons rice vinegar
2 tablespoons ancho chili powder
2 tablespoons honey
1/2 cup canola oil
Salt and freshly ground black pepper
1/4 cup finely chopped cilantro leaves
Place jicama, cabbage, and carrots in a large bowl. Whisk together the lime juice, vinegar, ancho powder, honey, and oil in a medium bowl. Season with salt and pepper, to taste. Pour the dressing over the jicama mixture and toss to coat well. Fold in the cilantro. Let stand at room temperature for 15 minutes before serving.
I like to add it to stir-frys, i think it adds alot of flavor to a chicken stir fry
Ingredients:
1 cup jicama, (matchsticks)
1 cup snow peas, cut into thin strips
1 cup shredded carrot, (long strands)
1 cup romaine lettuce, (coarsely shredded)
3 tablespoons red wine vinegar
2 tablespoons low-sodium soy sauce
2 tablespoons water
4 teaspoons honey
1/4 teaspoon toasted sesame oil
1 teaspoon sesame seeds
Directions:
In a salad bowl, combine jicama, snow peas, carrots and lettuce; toss gently. In a cup, stir together vinegar, soy sauce, water, honey and sesame oil. Pour over salad; toss and sprinkle with sesame seeds.
This recipe for Sesame Jicama Salad serves/makes 4
good in salads raw
It is best raw, sliced very thin like match sticks, and tossed in a salad. Its like a pear and an apple mixed.
PEEL IT. CUT IT IN SMALL THIN PIECES. PUT IT IN A BOWL WITH PEELED CUT UP CUCUMBER. SQUEEZE LEMON JUICE ON IT. SPRINKLE WITH HOT CHILE POWDER.
Jicama and Orange Salad
1 jicama, about a puond
2 cans of mandarin oranges drained of all but 2 Tablespoons liquid
1 Tablespoon lemon or lime juice
3 Tablespoons finely chopped cilantro
Salt to taste
-Peel the jicama and cut it into 1/4" cubes or julienne strips.
-Pour the lemon/lime juice, salt and mandarin liquid over the jicama and toss. You can let it sit and marinate if you wish.
-Add mandarins and cilantro, toss again, adjust seasonings and serve.
