Answer:
MEXICAN PICO DE GALLO
1 28 oz. Diced Tomatoes
1 Medium Onion (Diced)
1 T. Crushed Red Chiles
1 t. Garlic Powder
1/4 c. Louisiana Hot Sauce
? c. Water
2 Fresh Jalapenos (Diced)
Place all ingredients in a sauce pan and bring to a boil. Reduce heat and simmer approximately 15 minutes.
YIELD: APPROX. 1 QUART
Pico de Gallo
2-3 large firm tomatoes
2 medium white onions
10-12 fresh jalapenos
2 bunches cilantro
4-5 cloves garlic
1/4 cup red wine vinegar
1/4 cup oil
seasoning salt
pepper
garlic salt
Dice and combine tomatoes, onion and jalapenos
in a large bowl. Separate cilantro leaves from stems. Chop the leaves and add to the bowl. Mince the garlic and add it to the bowl. In a separate bowl, mix vinegar and oil. Season to taste with seasoning salt, pepper and garlic salt. Pour over tomato mixture and stir lightly.
Watermelon Pico de Gallo
This recipe is a hot and sweet blend of juicy watermelon,
crisp bell pepper, tangy cilantro and freshly chopped
jalapeno pepper, which is fat free, cholesterol free
and high in the antioxidant vitamin A.
4 c Watermelon, diced and seeded
1-1/2 c Jicama, diced
1/2 c Green pepper, diced
1/4 c Cilantro (chopped fresh)
1 T Jalapeno pepper, chopped
2 T Fresh lemon juice
1 T Honey
1 t Salt
1 t Garlic pepper
1/4 t Hot-pepper sauce
In large bowl, combine all ingredients; mix well.
Refrigerate, covered, at least one hour to blend flavors.
Stir before serving. Makes 12 servings.

Don't have an actual recipe, but when I make it, I cut up tomato, onion, jalapeno, and cilantro. I add salt, chilli powder, garlic powder and pepper. Then I add fresh lime juice and a little bit of the liquid from pickled jalepenos. I let it sit in the fridge covered tightly for about an hour.
This is also great if you add diced avocado (though that is getting away from pure pico).
Cilantro, tomato, lemon and lime(fresh), onions and salt and pepper to taste. Also, a little jalape?o if you like it spicy.
