i work with a bunch of cubans, and they are always trying to explain recipes to me, but they never give quanities! They make a really great fried beefsteak, you should marinate it with vinegar, olive oil, chopped onion, garlic and lemon juice for most of the day and then cook it that evening. Play around until you get it to taste the way you want...I'd suggest at least 1 onion and 4 cloves of garlic, then maybe a 1/4 cup of olive oil, 1/3 cup vinegar, and a couple tbsp of lemon juice. when you go to fry it, add some cumin, black pepper, and salt to taste. good luck. Arroz con Pollo (rice with chicken)
first you need medium grain rice, whole chicken cut in pieces, salt, adobo,red bell pepper, sofrito, sazon(seasoning),corn oil, Spanish olives, vinegar tomato sauce & pork skin. The day before : Season and spice the chicken with adobo, sofrito, sazon and vinegar and leave it overnight marinate. The day you cook:
In the Pot you going to cook the rice add 1 spoon of oil and cook the pork skin about 2"x2" square for 5 minutes at med high temp. to take the grease from the skin. remove the skin from the pot and add 2 tablespoons of sofrito, 1 envelope of sazon, 3 spoon fulls of olives. 1 small can of tomato sauce and 1 small can of red bell pepper.Then cook for 5 minutes minutes at med low temp. then add the whole chicken. Let cook for about 10 minutes adding a little bit of water. then add 21/2 cups of hot water and boil in high temp. when boil add 3 cups of rice and let dry. Turn the rice without touching the bottom part of the pot. lower the temp to very low and let cook for about 40 minutes. turning the rice at least one time during this time. Enjoy!!
