Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

The other day i had a drink that consisted of rum, (white) lime, cane sugar and i think a squeeze of lemon juice, This drink was the bomb! If anyone knows of this please add your ingredients. The waiter couldn't tell me what else was in the drink.

Also does anyone know how to make a Roti.. or any other delicious dishes from the Islands...

That's called a Mojito. It comes from Cuba. It's made with white rum, cane sugar, crushed mint (well, it's really supposed to be yerba santa) and a splash of club soda over crushed ice. Had them in Cuba and they were fabulous!

I take it you were in Trinidad because you can't get a good roti any where else. The drink you had was rum punch and the recipie for that is one part lime, two parts sugar,three parts of rum and four parts water and mix it all together. The roti is a lot more complicated. I can tell you how to do the curry filling but you need to learn how to do the wrapping from someone the process is ridiculously labour intensive!!! The secret of the curry is the type of powder you get if you ate a trini roti then you need to find Madras curry powder, that's different from the kind of curry they use in Jamaica and everywhere else. You chop up some onions and garlic and mix a few table spoons of curry powder with water to make a thin paste, as it sets it becomes thick ( you need to hydrate the spices or it can make you sick).Then you heat some oil in a pot and add the onions and garlic stir them around till they get translucent then add the curry paste and let it fry till it statrs to sound sticky and you can see bubbles coming up through it. Then you add whatever you're currying. Chicken and beef work well, or garbanzo beans or cubed potato. Bon apetit!!
